Edible Cookie Dough Hits Winston-Salem!

Nestled in the West End neighborhood of Winston-Salem is a 1906 antebellum home featuring Tart Sweets Bakery and Coffee Shop. In the front room is their newest product line –  raw, edible cookie dough, or as they like to call it, “Dolci Dough”.

The dough is made specifically for eating raw. “We use heat treated flour and pasteurized eggs to eliminate any concerns with contamination. And yes, it’s safe for those of you who are pregnant!” Lynn Tart, co-owner of Tart Sweets says. She adds that customers were ordering cookie dough frozen and eating it from the bag before they ever left the bakery. “We also began to notice folks wandering into the kitchen and asking for the last bits of cookie dough from our mixing bowls. We’d happily hand over the samples and then one day we realized, ‘We could sell this!’”, Lynn says. Once the lightbulb went off, Lynn says they began to tweak their most popular cookie recipes using the safe to eat ingredients.

After a little trial and error, they perfected their recipes to be eaten as raw cookie dough using the same real ingredients like pure butter and natural flavorings that customers love and expect. And thus, Dolci Dough was born. “We were selling raw dough late last year, but it wasn’t until January 2017 that we decided to brand it as “Dolci Dough” and add it as a permanent addition to our product mix,” Chelsea Tart, co-owner, states.

After the soft, private debut in the beginning of February, the response was so phenomenal that Lynn and Chelsea decided a dough bar must be installed. After careful planning and design, Tart Sweets installed their custom built dough bar (with help from LMI Builders) so all of Winston-Salem and beyond could experience Dolci Dough the way Lynn and Chelsea dreamt. Displayed similar to ice cream and gelato, the dough is scooped and served into a cup or cone and finished with the customer’s choice of toppings. The bar is currently open Friday from 1pm to 6pm and Saturday from 10am to 4pm, but hours will be extended as the demand for scoops grows.

The dough bar features six doughs each day with Chocolate Chip, Cake Batter, Plain Jane, and Monster available both days. On Friday, you will find Oatmeal Raisin and Brownie Batter Blast dough. On Saturday, Signature Brown Sugar Cinnamon and a Baker’s Choice flavor will enter the display case.

“As with our French macarons, we were the first in the Triad area to sell raw, edible cookie dough – we simply never realized it was in such high demand until recently! We even have brides wanting to include it as part of their reception desserts!”, Chelsea mentions. In addition to scoops, Tart Sweets also sells Dolci Dough by the jar. If you crave dough all the time (like we do), jars are always available in the coffee shop while they last.

Also available are doughwiches – two of their famous baked cookies sandwiched with your choice of freshly scooped raw cookie dough. If you’re looking for a “cooler” take on their doughwiches, sink your teeth into their signature ice cream sammies. You can choose from fresh baked cookies or raw cookie dough sandwiched with ice cream. The current raw dough flavors include chocolate chip dough filled with cookie dough ice cream or signature dough filled with salted caramel ice cream. Doughwiches and ice cream sammies are also available in the coffee shop while they last.

Customers can pair their dough with any of the handmade beverages offered in the coffee shop and enjoy their treats in a rocker on the front porch, inside in the welcoming atmosphere provided by their haunted home, or in the back courtyard by the warm firepit. Shipping capabilities are being fine-tuned and Tart Sweets expects full shipping to be available by May 1st, 2017. Vegan and dairy-free options are in the works and they should be launched by April 1st, 2017.
